Today has been a productive baking day, and I still want to make one more thing later this eve.
These cute cookies were my first attempt at baking in… a year or more, I think. ((I’m not good with making food)) They were made from a bagged Pillsbury sugar cookie mix, true, but for me, that’s a huge step forward.
And I decided to try to make them in a Petit Four pan that I had gotten a while ago from Williams-Sonoma (they appear to no longer have them, maybe?). Every time I tried to make petit fours they failed miserably, however, just dumping cookie mix into them was a total win!
They’re not quite as pretty as I had wanted, but the second batch was better than the first.
I filled up each little petit four mold about 2/3 of the way with the sugar cookie mix, and used my hands to press it down into the mold tightly. That seemed to be the key - it did still have some bubbles in it, but the second batch looked nicer for it.
I think next time I’ll try making almond cookies from scratch, maybe with some fruit in them, in the petit four pan :3
